Sensory Defects & Off-Smells

3. The Maillard Reaction in Coffee Roasting

The Maillard Reaction is a non-enzymatic chemical reaction between amino acids (proteins) and reducing sugars (glucose, fructose) when exposed to heat (typically between 150°C and 200°C / 300°F–392°F).
